Italian Heritage Celebration – Luisa Dolce

In terms of table, we go from the traditional dinners to the informal picnic buffet . All have in common lots of family and friends.
Top 10 dishes?

First position a sicilian cake from a small village. called “sfoglio” from Polizzi. A recipe that goes back to the xvii century, invented bu nuns in a convent, with a filling made of grated cheese, chocolate, cinnamon.

‘Arancini’ a street food . Rice ball, the original is filled with ragù and deep fried in a round shape or alternatively the oval shape with ham and mozzarella. Now, there are many alternatives. Originated in sicily, they are now found throughout Italy and also made elsewhere…. In Palermo there is a place where they do only arancini and have tens of different fillings….. From Salmon, to goat cheese, to broccoli, to sweet ones with chocolate.

Sicillian cannoli. You can’t beat that one either as a dessert. The trick is using the ricotta cheese made from cow and not sheep. Ideal to finish a dinner. It can be decorated with candy orange or chocolate spring les or pistachios springles.

Pasta a forno. Traditionally instead of lasagne, it’s used a special pasta, ring shaped with a rich ragù including the aubergine.

“Cunigghiu” typical Christmas dish of Polizzi, similar to the most famous ‘caponata which is mainly made with aubergines’, the ‘cunigghiu’ is made with artichokes, potatoes, dried courgettes, olives, capers and stockfish ans completed with vinegar
